Old-Fashioned Bread and Butter Pickles

1. Prepare the Cucumbers

Wash the cucumbers thoroughly and slice them into thin, even rounds. Thinly slice the onion as well.

Place the cucumbers and onion in a large bowl. Sprinkle with the kosher salt and gently toss to combine.

Cover and refrigerate for about 1–2 hours. This helps draw out excess moisture and gives the pickles a satisfying crunch.

2. Drain the Vegetables

After chilling, drain the cucumbers and onions thoroughly. Rinse them briefly with cold water, then drain again.

3. Make the Pickling Brine

In a large saucepan, combine:

  • White vinegar
  • Apple cider vinegar
  • Sugar
  • Mustard seeds
  • Celery seeds
  • Turmeric
  • Crushed red pepper flakes

Bring the mixture to a gentle boil over medium heat, stirring until the sugar has completely dissolved.

4. Add the Cucumbers

Add the drained cucumbers and onions to the hot brine. Stir gently and heat until the mixture is hot and the cucumbers just begin to soften.

Don’t overcook them—you want to preserve their crunch.

5. Fill the Jars

Pack the hot cucumber and onion mixture into clean jars, leaving appropriate headspace. Pour the hot brine over the vegetables so they are completely covered.

Wipe the jar rims clean and seal with lids.

6. Cool and Refrigerate

Allow the jars to cool before transferring them to the refrigerator.

For the best flavor, let the pickles sit for at least 24–48 hours before eating. The flavor becomes even better after several days.
