Magic Cake – Soft, Fluffy & Creamy

Step 1: Prepare the pan

Preheat your oven to 160°C (320°F).

Grease a 20 cm (8-inch) round cake pan and line the bottom with parchment paper.

Step 2: Separate the eggs

Separate the egg yolks from the whites.

Place the yolks in a large mixing bowl and the whites in another clean, dry bowl.

Step 3: Beat the yolks

Add the sugar to the egg yolks and whisk for about 2–3 minutes, until the mixture becomes pale and creamy.

Add the melted butter, vanilla, and water. Mix well.

Step 4: Add the flour

Sift the flour into the yolk mixture.

Mix gently until you have a smooth batter without lumps.

Step 5: Add the milk

Gradually pour in the lukewarm milk, whisking continuously.

The batter will become quite thin. That’s normal for magic cake.

Step 6: Whip the egg whites

Add the salt to the egg whites.

Beat until they form soft peaks. Don’t beat them until they become extremely stiff.

Step 7: Combine

Gently fold the whipped egg whites into the thin batter in 2–3 additions.

Don’t completely eliminate every little bit of foam—the uneven mixture helps create the cake’s characteristic texture.

Step 8: Bake

Pour the batter into the prepared pan.

Bake for approximately 50–60 minutes, or until the top is golden and the center has a slight jiggle.

If the top browns too quickly, loosely cover it with aluminum foil.

Step 9: Cool completely

Remove the cake from the oven and allow it to cool in the pan.

For the best texture, refrigerate it for at least 2 hours, preferably overnight.

Step 10: Finish and serve

Carefully remove the cake from the pan.

Dust generously with powdered sugar, then slice with a sharp knife.

You should get a cake that is golden and lightly crisp on top, creamy and tender in the middle, with delicate layers underneath.

  • Make sure the milk is lukewarm, not hot.
  • Don’t overbeat the egg whites.
  • Fold gently rather than vigorously stirring.
  • Don’t skip the chilling step—it makes slicing much easier.
  • A little jiggle in the center when it comes out of the oven is normal.

This is one of those cakes that looks simple going into the oven but feels almost magical when you cut into it!
