Korean BBQ Meatballs with Creamy Spicy Mayo Dip

1. Prepare the meatball mixture
Add the ground meat, egg, breadcrumbs, garlic, green onions, soy sauce, sesame oil, ginger, gochujang, black pepper, paprika, and red pepper flakes to a large bowl.

Mix gently with your hands or a spoon until everything is evenly combined. Avoid overmixing so the meatballs stay tender.

2. Shape the meatballs
Form the mixture into small, evenly sized balls. You should get approximately 16–20 meatballs, depending on their size.

3. Cook the meatballs
Heat a little oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides and cooked through, about 10–12 minutes.

For food safety, ground meat should reach an internal temperature of 160°F (71°C) for beef or 165°F (74°C) for poultry.

4. Make the creamy spicy sauce
In a bowl, whisk together the Greek yogurt, mayonnaise, gochujang, sesame oil, lime juice, garlic, and honey.

Add a little water if you want a thinner, pourable consistency.

5. Coat the meatballs
Once the meatballs are cooked, you can drizzle the sauce over them or gently toss them in the sauce just before serving.

6. Garnish and serve
Place the meatballs on a serving plate and drizzle generously with the creamy spicy sauce. Sprinkle with chopped green onions and a few sesame seeds.

Serve immediately while hot.
