Step 1: Cook the Beets

Wash the beets thoroughly, leaving about 1 inch of the stems attached.

Place them in a large pot and cover with water.

Bring to a boil, then reduce the heat and simmer for 45–60 minutes, or until the beets are fork-tender.

Step 2: Cool and Peel

Drain the cooked beets and let them cool until easy to handle.

Rub the skins off with your hands or a paper towel.

Trim off the stems and roots.

Step 3: Slice the Beets

Cut the peeled beets into ¼-inch thick slices, wedges, or cubes, depending on your preference.

Pack the beet pieces into clean glass jars.

Simmer for 2–3 minutes.

Step 5: Fill the Jars

Carefully pour the hot brine over the sliced beets, making sure they are completely covered.

Leave about ½ inch (1 cm) of headspace at the top of each jar.

Remove any air bubbles by gently tapping the jars or using a clean utensil.

Seal the jars with lids.

Step 6: Chill

Allow the jars to cool to room temperature.

Refrigerate for at least 24 hours before serving.

For the best flavor, let them pickle for 2–3 days.
