Prepare the cream:
- In a large bowl, use an electric mixer to whip the egg yolks with ¼ cup granulated sugar until very pale yellow and nearly tripled in volume. When you lift the beaters, the mixture should fall in a soft ribbon. Set aside.
- In a medium bowl, whip the heavy cream with the remaining ¼ cup sugar until soft peaks form.
- Add the mascarpone to the whipped cream. Continue mixing until the mixture is soft, spreadable, and holds medium peaks.
- Carefully fold the mascarpone mixture into the whipped egg yolks until smooth and fully incorporated. Take your time so the cream stays light and fluffy.
Assemble the tiramisu:
- Stir the cooled espresso and amaretto or cognac together in a shallow bowl.
- Coat the bottom of a 2-quart baking dish with an even layer of sifted cocoa powder. An 8×8-inch dish or 9-inch round cake pan works well.
- Quickly dip each gluten-free ladyfinger into the espresso mixture, one at a time. Don’t let them soak; they absorb liquid fast and can become too soft.
- Arrange half of the dipped ladyfingers, rounded side up, in an even layer in the dish. Break a few in half as needed to fill larger gaps.
- Cover the ladyfingers with half the mascarpone cream, spreading it evenly.
- Repeat with the remaining espresso-dipped ladyfingers and mascarpone cream.
- Sprinkle the remaining tablespoon of cocoa powder over the top, then cover tightly and refrigerate for at least 4 hours. To get the best results, let it chill overnight.
- Before serving, top with shaved or finely grated bittersweet chocolate. Serve chilled, sliced, or scooped into bowls.
Notes
- Do not soak the ladyfingers. A quick dip is all they need; gluten-free ladyfingers can become soft very quickly.
- Make ahead: This dessert is best after an overnight chill, making it ideal for entertaining.
- Alcohol-free option: Replace the liqueur or cognac with an additional ¼ cup espresso or strong coffee.
- Storage: Cover and refrigerate leftovers for up to 3 days.
- Gluten-free reminder: Check the labels on ladyfingers, cocoa powder, chocolate, liqueur, and mascarpone if preparing this dessert for someone with celiac disease.
