Easy Homemade Flatbread

1. Mix the dry ingredients
In a large bowl, combine the flour, baking soda, and salt. Whisk or stir until evenly mixed.

2. Add the water
Gradually pour in the warm water while mixing with a spoon or your hands. Add the water slowly—you may not need all of it.

3. Knead the dough
Once a dough forms, transfer it to a lightly floured surface. Knead for about 5–7 minutes, until smooth and soft. If using olive oil, knead it in during this step.

4. Let the dough rest
Cover the dough with a clean kitchen towel and let it rest for 15–20 minutes. This makes it much easier to roll.

5. Divide the dough
Cut the dough into 8 equal pieces and roll each piece into a ball.

6. Roll out the flatbreads
Lightly flour your work surface. Roll each ball into a thin circle, approximately 7–8 inches (18–20 cm) wide.

7. Heat the pan
Place a large nonstick or cast-iron skillet over medium-high heat. You don’t need to add oil.

8. Cook the first side
Place one flatbread in the hot skillet. Cook for about 45–60 seconds, until small bubbles appear and golden-brown spots form.

9. Flip and cook
Turn the flatbread over and cook for another 30–60 seconds, until lightly browned.

10. Keep them soft
Transfer each cooked flatbread to a plate and cover with a clean kitchen towel. Stacking them helps trap steam and keeps them soft and flexible.

  • 🍳 Breakfast wraps

Tip: Don’t overcook them. The longer they stay on the pan, the more likely they are to become dry and crispy instead of soft and foldable.
