  • by

Step 1: Prepare the Spinach

  • Heat the olive oil in a skillet over medium heat.
  • Add the garlic and cook for about 30 seconds until fragrant.
  • Add the spinach and cook for 2–3 minutes until wilted.
  • Remove from the heat and let it cool.
  • Squeeze out as much excess moisture as possible.

Step 2: Make the Filling

  • In a large bowl, combine the cooked spinach, feta cheese, mozzarella, Parmesan, oregano, and black pepper.
  • Mix until evenly combined.

Step 3: Prepare the Pastry

  • Preheat the oven to 400°F (200°C).
  • Line a baking tray with parchment paper.
  • Roll out the puff pastry slightly if needed.

Step 4: Fill and Roll

  • Spread the spinach and cheese mixture evenly over each sheet of puff pastry, leaving a 1-inch border around the edges.
  • Starting from the long side, roll the pastry tightly into a log.

Step 5: Slice

  • Cut each roll into 2-inch (5 cm) pieces.
  • Arrange them on the prepared baking tray with the cut side facing up.

Step 6: Add the Egg Wash

  • Brush each pastry with the beaten egg.
  • Sprinkle with sesame seeds if desired.

Step 7: Bake

  • Bake for 20–25 minutes, or until the pastries are puffed and deep golden brown.

Step 8: Cool and Serve

  • Let the pastries cool for 5 minutes before serving.
  • Enjoy warm or at room temperature.

Serving Suggestions

These pastry triangles pair perfectly with:

  • Tzatziki sauce
  • Garlic yogurt dip
  • Marinara sauce
  • Tomato soup
  • Greek salad
  • Roasted vegetables
  • Fresh fruit

Tips

  • If using frozen spinach, thaw it completely and squeeze out all excess water to keep the pastry crisp.
  • Avoid overfilling the pastry so it seals and bakes evenly.
  • For extra flavor, add chopped dill, parsley, or green onions to the filling.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven for 8–10 minutes to restore crispness.
