Step 1: Cook the Potatoes

  • Bring a large pot of salted water to a boil.
  • Add the potatoes and cook for 15–20 minutes, or until fork-tender.
  • Drain well and let them sit for a few minutes to remove excess moisture.

Step 2: Mash

  • Mash the potatoes until completely smooth with no lumps.
  • Allow them to cool for about 10 minutes.

Step 3: Mix the Filling

  • Add the shredded cheese, Parmesan (if using), parsley, green onions, garlic, egg, cornstarch, salt, pepper, and paprika.
  • Mix until everything is evenly combined and forms a soft dough.

  • Scoop about 2 tablespoons of the potato mixture.
  • Roll into a ball, then gently flatten into a thick round patty.
  • Repeat until all the mixture is used.

Step 5: Chill

  • Place the patties on a baking tray.
  • Refrigerate for 20–30 minutes to help them hold their shape while frying.

Step 6: Fry

  • Heat about 1 inch of vegetable oil in a skillet over medium heat.
  • Fry the patties in batches for 3–4 minutes per side, until deep golden brown and crispy.
  • Transfer to a paper towel-lined plate to drain excess oil.

Step 7: Serve

  • Garnish with extra parsley or green onions.
  • Serve hot with your favorite dipping sauce.
