Classic South African Amasi Scones

Step 1: Preheat the Oven

Preheat your oven to 180°C (350°F).

Line two baking trays with parchment paper or lightly grease them.

Step 2: Mix the Dry Ingredients

In a large mixing bowl, combine:

  • Flour
  • Baking powder
  • Sugar

Mix well.

Step 3: Rub in the Margarine

Cut the chilled margarine into small cubes.

Rub it into the flour mixture using your fingertips until the mixture resembles coarse breadcrumbs.

Step 4: Mix the Wet Ingredients

In another bowl, whisk together:

  • 3 eggs
  • Amasi
  • Vanilla essence

Mix until smooth.

Step 5: Make the Dough

Gradually add the wet mixture to the dry ingredients.

Mix gently until a soft dough forms.

Do not overmix, as this can make the scones dense.

Step 6: Shape the Scones

Lightly flour your work surface.

Roll or gently pat the dough to about 2–3 cm (¾–1 inch) thick.

Use a round cutter or glass to cut out the scones.

Place them on the prepared baking trays, leaving a little space between each one.

Step 7: Brush with Egg Wash

Brush the tops of the scones with the beaten egg for a beautiful golden finish.

Step 8: Bake

Bake for 18–22 minutes, or until the tops are golden brown and the scones are fully cooked.

Step 9: Cool

Transfer the scones to a wire rack and let them cool slightly before serving.
