Chinese Pepper Steak with Onions

1. Slice and season the steak

Slice the ribeye thinly against the grain. Toss it with soy sauce, cornstarch, black pepper, and vegetable oil. Let it sit for 10–15 minutes.

2. Prepare the sauce

In a small bowl, whisk together the beef broth, soy sauce, brown sugar, oyster sauce, rice vinegar, sesame oil, and red pepper flakes.

3. Sear the beef

Heat a large skillet or wok over high heat. Add a little oil and cook the steak in batches for about 1–2 minutes per side, until nicely browned.

Don’t overcrowd the pan. Transfer the cooked beef to a plate.

4. Cook the vegetables

Add the onion and bell peppers to the same pan. Stir-fry for approximately 3–4 minutes, keeping them slightly crisp.

5. Add garlic and ginger

Add the minced garlic and grated ginger. Stir-fry for about 30 seconds, just until fragrant.

6. Bring everything together

Return the steak to the pan and pour in the prepared sauce. Toss everything together and cook for 2–3 minutes, until the sauce is hot and slightly thickened.

7. Serve

Serve immediately over steamed white rice, brown rice, or noodles. Garnish with sesame seeds or sliced green onions if desired.
