Baked Spinach Mushroom Quesadillas

  • by

Step 1: Preheat the Oven

Preheat your oven to 200°C (400°F).

Line a large baking sheet with parchment paper to prevent the quesadillas from sticking.

For extra-crispy tortillas, lightly brush the parchment paper with a little olive oil.

Step 2: Prepare the Mushrooms

Clean the mushrooms with a damp paper towel and slice them into thin pieces.

Heat the olive oil in a large skillet over medium-high heat.

Add the chopped onion and cook for 2–3 minutes until softened.

Stir in the minced garlic and cook for approximately 30 seconds until fragrant.

Add the sliced mushrooms and cook for 5–7 minutes, stirring occasionally, until they release their moisture and become golden brown.

Allow most of the liquid to evaporate so the filling doesn’t make the tortillas soggy.

Step 3: Add the Spinach and Seasonings

Add the fresh spinach to the skillet in handfuls.

Stir for 2–3 minutes until the spinach wilts and blends with the mushrooms.

Season with salt, black pepper, smoked paprika, oregano, and optional chili flakes.

Mix thoroughly, then remove the skillet from the heat.

Allow the filling to cool for a few minutes. If you notice excess liquid, drain it before assembling the quesadillas.

Step 4: Prepare the Cheese Mixture

In a small bowl, combine the shredded mozzarella and cheddar cheese.

Mozzarella provides a stretchy, melted texture, while cheddar adds a richer, savory flavor.

You can use Monterey Jack, Gouda, or another good melting cheese if preferred.

Step 5: Assemble the Quesadillas

Place the flour tortillas on a clean work surface.

Sprinkle a layer of shredded cheese over one half of each tortilla.

Add an even portion of the spinach and mushroom mixture on top.

Sprinkle another layer of cheese over the vegetables. The cheese helps hold the filling together as it melts.

Fold each tortilla in half to create a half-moon shape.

Press gently to secure the filling without squeezing it out.

Step 6: Arrange on the Baking Sheet

Place the folded quesadillas on the prepared baking sheet in a single layer.

Lightly brush the tops with olive oil for a beautiful golden finish.

Leave a little space between each quesadilla so the hot air can circulate around them.

Step 7: Bake Until Golden and Crispy

Place the baking sheet in the preheated oven.

Bake for 8–10 minutes, then carefully flip the quesadillas using a spatula.

Return them to the oven and bake for another 5–8 minutes, or until both sides are golden brown and the cheese has melted completely.

Cooking time may vary depending on the thickness of the tortillas and your oven.

For extra browning, switch on the broiler for the final 1–2 minutes, watching carefully to prevent burning.

Step 8: Let Them Rest

Remove the quesadillas from the oven and allow them to rest for 2 minutes.

This helps the melted cheese settle slightly, making the quesadillas easier to cut without losing their filling.

Step 9: Slice and Serve

Cut each quesadilla into three or four wedges using a sharp knife or pizza cutter.

Arrange the wedges on a serving plate and sprinkle with freshly chopped parsley.

Serve immediately with sour cream, salsa, or a squeeze of fresh lime juice.

Enjoy the crispy tortillas, savory mushrooms, tender spinach, and delicious melted cheese in every bite!

Tips for Perfect Spinach Mushroom Quesadillas

Cook the mushrooms thoroughly: Allow their moisture to evaporate and let them turn golden brown for the best flavor.

Remove excess liquid: Wet filling can make tortillas soft instead of crispy.

Use freshly shredded cheese: It generally melts more smoothly than many pre-shredded varieties.

Don’t overfill the tortillas: A moderate amount of filling makes folding and flipping easier.

Brush lightly with olive oil: A thin coating helps the tortillas become golden and crunchy without making them greasy.

Flip halfway through baking: This helps both sides cook evenly.

Serve immediately: These quesadillas are at their crispiest when freshly baked.
