This Vegetable Supports Healthy Vision, Digestion and Liver Health — Here’s How to Eat It

  • by

That deep red-purple vegetable is beetroot, a colorful root vegetable that has been part of traditional diets for generations. It is packed with nutrients and naturally occurring plant compounds that can make it a valuable addition to a balanced diet.

Beetroot does not literally “clean fat” from the colon or liver, and it cannot restore lost vision overnight. However, regularly eating beetroot may support several aspects of overall health.

Why Beetroot Deserves a Place on Your Plate

Beetroot contains folate, potassium, fiber and antioxidants, including betalain pigments responsible for its distinctive red-purple color.

Its natural nitrates are converted by the body into nitric oxide, which helps support normal blood-vessel function and circulation. This is one reason beetroot has been studied for its potential effects on blood pressure and exercise performance.

How Beetroot Can Support Digestion

The fiber in whole beetroot contributes to a healthy digestive system. Eating enough dietary fiber can help promote regular bowel movements and support beneficial gut bacteria.

For the greatest fiber benefit, choose whole cooked or raw beetroot rather than relying only on beetroot juice.

What About the Liver?

Your liver already has sophisticated systems for processing and removing substances from the body. No food can “flush fat out of the liver” in a few hours.

However, eating more vegetables—including beetroot—in place of highly processed foods, excessive added sugar and unhealthy fats can contribute to an overall eating pattern that supports metabolic and liver health.

What About Eye Health?

Beetroot isn’t a treatment for cataracts, glaucoma or other eye diseases. But its nutrients and antioxidant compounds can contribute to a generally healthy diet, and a diet rich in vegetables is associated with better overall nutritional support for eye health.

If you experience persistent blurry vision, sudden vision changes, flashes, new floaters or eye pain, don’t rely on a vegetable remedy—get an eye examination.

A Simple Beetroot Recipe

Try this easy preparation:

Ingredients:

  • 1 medium cooked beetroot
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon lemon juice
  • A small pinch of salt
  • Fresh parsley
  • Optional: a little garlic

Method:

  1. Wash the beetroot thoroughly and cook until tender.
  2. Allow it to cool and remove the skin.
  3. Slice or grate the beetroot.
  4. Add lemon juice and olive oil.
  5. Sprinkle with parsley and a small amount of salt.
  6. Toss everything together and serve as a side dish or salad.

Beetroot can also be roasted, added to soups, mixed into salads or blended into smoothies.

One Important Note

Beetroot can temporarily turn urine or stool pink/red, a harmless effect known as beeturia. People who have kidney stones or certain medical conditions may also need to consider their overall beetroot intake, so it’s worth asking a healthcare professional if you’re unsure.

The real benefit isn’t a miracle “cleanse.” It’s the simple habit of adding a nutrient-rich vegetable to a balanced diet regularly.
