Sugar-Free Apple and Raisin Cake

  • by

Step 1: Prepare the Oven and Pan

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a small cake pan, approximately 6–7 inches in diameter.
  3. Line the bottom with parchment paper to help prevent the cake from sticking.
  4. Set the prepared pan aside.

Step 2: Beat the Eggs

  1. Crack the eggs into a medium mixing bowl.
  2. Add the pinch of salt.
  3. Whisk for 2–3 minutes until the eggs become slightly pale and foamy.
  4. Add the vanilla extract and mix again.

Beating the eggs well helps give this small cake a lighter texture.

Step 3: Add the Melted Butter

  1. Allow the melted butter to cool until just warm.
  2. Gradually pour it into the beaten eggs while whisking gently.
  3. Mix until the ingredients are evenly combined.

Avoid adding very hot butter, as it can partially cook the eggs.

Step 4: Combine the Dry Ingredients

  1. In a separate bowl, combine the flour and baking powder.
  2. Whisk briefly to distribute the baking powder evenly.
  3. Add the dry ingredients to the egg mixture.
  4. Gently fold everything together with a spatula until no dry flour remains.

Do not overmix, as excessive mixing can make the cake dense.

Step 5: Add the Apples and Raisins

  1. Peel the apple and remove its core.
  2. Chop it into small, bite-sized pieces.
  3. Add the chopped apple and black raisins to the batter.
  4. Fold gently until the fruit is evenly distributed.

If your raisins are particularly dry, soak them in warm water for 5–10 minutes, then drain and dry them before adding them to the batter.

Step 6: Transfer the Batter to the Pan

  1. Pour the batter into the prepared cake pan.
  2. Spread it evenly with a spatula.
  3. Gently tap the pan on the counter to remove any large air pockets.
  4. Arrange a few apple pieces on top if you want a more decorative finish.

Step 7: Bake the Cake

  1. Place the pan in the preheated oven.
  2. Bake for approximately 30–40 minutes.
  3. Check the cake after 30 minutes.
  4. Insert a toothpick into the center. If it comes out clean or with a few moist crumbs, the cake is ready.
  5. If the top browns too quickly, loosely cover it with foil while the center finishes baking.

Baking time may vary depending on the size of your pan and the moisture content of the apples.

Step 8: Cool and Serve

  1. Remove the cake from the oven.
  2. Let it cool in the pan for 10–15 minutes.
  3. Carefully transfer it to a wire rack.
  4. Allow it to cool before slicing.
  5. Serve plain or with a little cinnamon sprinkled on top.

Enjoy a soft, fruity cake with the natural sweetness of apples and raisins!

Tips for the Best Sugar-Free Cake

  • Choose a naturally sweet apple: Varieties such as Fuji or Gala can make the cake sweeter without added sugar.
  • Cut the apple into small pieces: Smaller pieces distribute more evenly and soften during baking.
  • Beat the eggs thoroughly: This helps incorporate air into the batter.
  • Measure the flour accurately: Too much flour can make this small cake dry.
  • Don’t overbake: Remove the cake when a toothpick inserted into the center comes out clean.
  • Add cinnamon if desired: A little ground cinnamon complements the apple and raisin flavors beautifully.
