Strawberry Watermelon Pink Drink

Prepare the fruit: Wash and hull 300 grams fresh strawberries, hulled and sliced. Cut 400 grams watermelon, cubed (seeds removed) into chunks, removing all seeds. Place both fruits into a clean glass jar or bowl. Let them sit for 10 minutes so the natural juices start to release.2

Blend the fruit: Add the strawberries and watermelon to a blender. Blend on high until completely smooth and creamy pink.3

Make the simple syrup: In a small saucepan over medium heat, combine 500 milliliters water and 3 tablespoons sugar or honey. Stir until sugar fully dissolves. Remove from heat and let cool completely.4

Strain the juice: Pour the blended fruit through a fine mesh strainer or cheesecloth into a large bowl or jug. Press gently with a spoon to extract all the juice. Discard the pulp or save it for smoothies.5

Combine and balance: Mix the strained fruit juice with the cooled syrup. Add 2 tablespoons fresh lemon juice and 1 pinch pinch of salt. Stir well. Taste and adjust sweetness or lemon to your liking. Add 6 fresh mint leaves (optional) if using.6

Chill and bottle: Pour into clean glass bottles or a jug. Refrigerate for at least 60 minutes60:00

Serve: Pour into tall glasses over ice. Garnish with a fresh strawberry or mint sprig. Keeps in the fridge for up to 3 days.
