Roasted Root Vegetable Bake with Walnuts & Feta

Step 1: Prepare the Vegetables

Wash, peel, and slice all vegetables into thin rounds so they cook evenly.

Try to keep the slices close to the same thickness for the best texture.

Step 2: Season Everything

Place the sliced vegetables into a large bowl.

Add:

  • Olive oil
  • Garlic powder
  • Thyme
  • Oregano
  • Salt
  • Black pepper

Toss everything well until the vegetables are fully coated.

Step 3: Arrange in the Baking Dish

Preheat your oven to 400°F (200°C).

Arrange the vegetable slices upright in rows inside a greased baking dish, alternating colors for a beautiful presentation.

Tuck the slices tightly together.

Step 4: First Bake

Cover the dish loosely with foil.

Bake for 35 minutes until the vegetables begin to soften.

Step 5: Add Walnuts and Cheese

Remove the foil carefully.

Sprinkle:

  • Crumbled feta cheese
  • Walnuts

across the top of the vegetables.

If you like a touch of sweetness, drizzle lightly with honey.

Step 6: Final Roast

Return the dish to the oven uncovered.

Bake another 20–25 minutes until:

  • The edges are golden
  • Walnuts are toasted
  • Cheese becomes slightly creamy and browned

Step 7: Garnish and Serve

Remove from the oven and let it rest for 5 minutes.

Top with chopped fresh parsley before serving.
