  1. Place the peeled and cubed potatoes in a large pot.
  2. Cover with water and add a pinch of salt.
  3. Bring to a boil and cook for 15–20 minutes, or until fork-tender.
  4. Drain well and let them sit for 2 minutes to remove excess moisture.

Step 2: Make the Mashed Potato Mixture

  1. Transfer the hot potatoes to a large bowl.
  2. Add butter, salt, and black pepper.
  3. Mash until completely smooth.
  4. Stir in parsley and cornstarch.
  5. Mix well and allow the mixture to cool completely.

Step 3: Form the Cheese Balls

  1. Take about 2 tablespoons of mashed potato mixture.
  2. Flatten it in your palm.
  3. Place a cube of mozzarella cheese in the center.
  4. Carefully wrap the potato mixture around the cheese.
  5. Roll into a smooth ball.
  6. Repeat until all the mixture is used.

Step 4: Coat the Balls

  1. Roll each ball in flour.
  2. Dip into the beaten eggs.
  3. Coat thoroughly with breadcrumbs.
  4. For extra crispiness, repeat the egg and breadcrumb coating once more.
  5. Place the coated balls on a tray.

Step 5: Chill

  1. Refrigerate the cheese balls for 20–30 minutes.
  2. This helps them hold their shape during frying.

Step 6: Fry Until Golden

  1. Heat oil in a deep pan to 175°C (350°F).
  2. Carefully add a few balls at a time.
  3. Fry for 3–4 minutes, turning occasionally.
  4. Cook until golden brown and crispy.
  5. Remove with a slotted spoon and drain on paper towels.

Step 7: Serve

  1. Serve immediately while the cheese is hot and gooey.
  2. Pair with ketchup, garlic aioli, ranch dressing, or spicy mayo.
  3. Garnish with fresh parsley if desired.
