1. Cook the beef
Heat a large skillet over medium heat. Add the ground beef and chopped onion.
Cook for 6–8 minutes, breaking the beef apart as it cooks, until browned and the onion is softened. Drain excess grease.
2. Add garlic
Stir in the minced garlic and cook for about 30 seconds, until fragrant.
3. Make the chili mixture
Add the diced tomatoes, tomato sauce, corn, beef broth, chili powder, cumin, paprika, salt, and black pepper.
Stir well and bring to a gentle simmer. Cook uncovered for about 10 minutes, allowing the flavors to combine.
4. Add the pasta
Stir in the cooked pasta and mix until everything is evenly coated with the chili sauce.
5. Transfer to a baking dish
Preheat the oven to 375°F (190°C).
Transfer the mixture to a lightly greased baking dish and spread it evenly.
6. Add the cheese
Sprinkle the cheddar and mozzarella or Monterey Jack evenly over the top.
7. Bake
Bake uncovered for approximately 20–25 minutes, until the cheese is melted, bubbling, and lightly golden.
8. Serve
Let it rest for about 5 minutes, then sprinkle with fresh parsley and serve hot.
