Step 1: Bloom the Gelatin

Pour ¼ cup of the cold water into a small bowl. Sprinkle the gelatin evenly over the top and let it sit for 5 minutes until it becomes spongy.

Step 2: Heat the Liquid

In a small saucepan, combine:

  • Remaining ¾ cup water
  • Honey
  • Lemon juice
  • Ground turmeric
  • Ground ginger

Warm over low heat until the honey dissolves. Do not let the mixture boil.

Step 3: Add the Gelatin

Remove the saucepan from the heat. Add the bloomed gelatin and whisk until completely dissolved and smooth.

Step 4: Strain (Optional)

For extra-smooth gummies, strain the mixture through a fine-mesh sieve to remove any small lumps or spice particles.

Step 5: Fill the Molds

Carefully pour the mixture into silicone gummy molds or a lightly greased small glass dish.

Step 6: Chill

Refrigerate for at least 2 hours, or until the gummies are firm.

Step 7: Unmold

Gently remove the gummies from the molds. If using a dish, cut into bite-sized squares.

Storage

  • Refrigerator: Store in an airtight container for up to 1 week.
  • Freezer: Freeze for up to 2 months and thaw in the refrigerator before serving.

  • Use freshly squeezed lemon juice for the best flavor.
  • Silicone molds make it easy to remove the gummies without sticking.
  • For a sweeter gummy, add an extra tablespoon of honey.
  • If you prefer a firmer texture, increase the gelatin by ½ tablespoon.
