Step 1: Activate the Yeast

  1. Warm the milk until it is warm but not hot (about 110°F/43°C).
  2. Stir in the sugar.
  3. Sprinkle the yeast over the milk.
  4. Let it sit for 5–10 minutes until foamy.

Step 2: Make the Dough

  1. Add the melted butter, eggs, and salt to the yeast mixture.
  2. Gradually mix in the flour, one cup at a time.
  3. Stir until a soft dough forms.
  4. Knead for 8–10 minutes by hand or 5–6 minutes with a stand mixer until smooth and elastic.

Step 3: First Rise

  1. Place the dough in a lightly greased bowl.
  2. Cover with a clean towel or plastic wrap.
  3. Let rise in a warm place for 1 to 1½ hours, or until doubled in size.

Step 4: Prepare the Filling

  1. In a small bowl, combine the brown sugar and cinnamon.
  2. Set aside.
  3. Keep the softened butter ready for spreading.

Step 5: Roll Out the Dough

  1. Punch down the risen dough.
  2. Roll it into a rectangle about 16 x 12 inches.
  3. Spread the softened butter evenly over the surface.
  4. Sprinkle the cinnamon sugar mixture evenly over the butter.

Step 6: Shape the Rolls

  1. Starting with the long side, roll the dough tightly into a log.
  2. Pinch the seam closed.
  3. Slice into 12 equal rolls using a sharp knife or unflavored dental floss.

Step 7: Second Rise

  1. Arrange the rolls in a greased 9×13-inch baking dish.
  2. Cover loosely.
  3. Let rise for 30–45 minutes, until puffy.

Step 8: Bake

  1. Preheat the oven to 350°F (175°C).
  2. Bake for 25–30 minutes, or until the tops are lightly golden and the centers are cooked through.
  3. Remove from the oven and let cool for about 10 minutes.

Step 9: Make the Cream Cheese Icing

  1. Beat the softened cream cheese and butter until smooth.
  2. Add the powdered sugar and vanilla extract.
  3. Mix until creamy and spreadable.

Step 10: Frost and Serve

  1. Spread the icing over the warm cinnamon rolls.
  2. Allow it to melt into every swirl.
  3. Serve warm with coffee, tea, or a glass of milk.

Tips for Perfect Cinnamon Rolls

  • Use warm—not hot—milk to activate the yeast.
  • Don’t add too much flour; the dough should be soft and slightly tacky.
  • Let the dough fully double during the first rise for the fluffiest texture.
  • For extra gooey rolls, spread the icing while they’re still warm.
  • Store leftovers in an airtight container for up to 3 days, or refrigerate for up to 5 days. Reheat for 15–20 seconds in the microwave before serving.

These homemade cinnamon rolls are irresistibly soft, packed with buttery cinnamon flavor, and finished with a silky cream cheese icing that makes every bite melt in your mouth. Perfect for weekend breakfasts, holiday mornings, or anytime you want a cozy homemade treat.
