High-Protein Veggie Casserole with Creamy Sauce

1. Prepare the vegetables

Preheat your oven to 400°F (200°C).

Wash and chop the broccoli and cauliflower into bite-sized florets. Dice the bell peppers and halve the cherry tomatoes.

2. Make the creamy sauce

Add the Greek yogurt, cottage cheese, milk, garlic, Parmesan, Italian seasoning, salt, and black pepper to a blender.

Blend until smooth and creamy.

3. Season the vegetables

Place the broccoli, cauliflower, bell peppers, and cherry tomatoes in a large bowl.

Add the olive oil, garlic powder, Italian seasoning, paprika, salt, and pepper. Toss until everything is evenly coated.

4. Assemble the casserole

Transfer the vegetables to a greased baking dish and spread them into an even layer.

Pour the creamy sauce evenly over the vegetables.

Sprinkle the mozzarella and Parmesan cheese over the top.

5. Bake

Cover the dish loosely with foil and bake for 20 minutes.

Remove the foil and continue baking for another 10–15 minutes, until the vegetables are tender and the cheese is melted and golden.

6. Rest and serve

Remove the casserole from the oven and let it rest for about 5 minutes.

Garnish with fresh parsley or a sprinkle of Parmesan if desired.

Serve warm as a satisfying vegetarian meal or alongside grilled chicken, fish, or roasted meat.

For an even higher-protein meal, add 1 cup cooked chicken, turkey, chickpeas, or extra cottage cheese before baking.
