High-Protein Peanut Butter Balls

1. Make the peanut butter mixture

Add the peanut butter, oat flour, protein powder, honey, and vanilla extract to a bowl.

Stir until everything is well combined and a soft, moldable mixture forms.

2. Shape the balls

Scoop out about 1 tablespoon of the mixture at a time and roll between your palms to form small balls.

Place them on a parchment-lined plate or tray.

3. Chill

Refrigerate the peanut butter balls for 20–30 minutes. Chilling makes them easier to coat with chocolate.

4. Melt the chocolate

Place the chocolate chips in a microwave-safe bowl and heat in 15–20 second intervals, stirring between each interval until smooth.

If desired, stir in the coconut oil to make the chocolate coating smoother.

5. Coat the balls

Dip each chilled peanut butter ball into the melted chocolate using a fork.

Allow the excess chocolate to drip off, then place the coated balls back onto the parchment paper.

6. Set the chocolate

Refrigerate for another 20–30 minutes, or until the chocolate has completely set.

7. Store and enjoy

Keep the peanut butter balls in an airtight container in the refrigerator.

They’re delicious straight from the fridge and make an easy grab-and-go snack.
