1. Prepare the Potatoes
Peel the potatoes and cut them into thick chips.
Place them in cold water and rinse several times to remove excess starch. Drain and pat them thoroughly dry with a clean towel.
2. Cook the Chips
Heat oil in a deep fryer or large, heavy saucepan.
Carefully add the chips and cook until they are tender but still pale. Remove and drain.
