Golden Roasted Zucchini Boats with Cranberry Chili Honey, Whipped Feta & Crispy Prosciutto

  • by

Step 1: Prepare the Oven

Preheat your oven to 200°C (400°F).

Line two baking sheets with parchment paper. One will be used for the zucchini and squash, and the other can be used for crisping the prosciutto.

Step 2: Prepare the Zucchini

Wash the zucchini and cut each one in half lengthwise.

Using a small spoon, carefully scoop out the center flesh, leaving a border of approximately ½ cm around the edges to create sturdy boats.

Finely chop the scooped-out flesh and set it aside. You can add a little of it to the squash filling to reduce waste.

Place the zucchini halves cut-side up on a baking sheet.

Brush them lightly with olive oil and season with a pinch of salt and black pepper.

Step 3: Roast the Butternut Squash

Place the diced butternut squash in a bowl.

Add the olive oil, salt, black pepper, smoked paprika, garlic powder, and dried thyme. Toss until the cubes are evenly coated.

Spread the squash in a single layer on the prepared baking sheet.

Roast for 20–25 minutes, turning halfway through, until golden on the edges and tender in the center.

Step 4: Roast the Zucchini Boats

Place the zucchini halves in the oven and roast for approximately 10–15 minutes, depending on their size.

They should begin to soften but still hold their shape.

If liquid collects inside the boats, carefully drain it before adding the filling. This helps prevent the finished dish from becoming watery.

Step 5: Make the Whipped Feta

Place the feta cheese, cream cheese, Greek yogurt, olive oil, lemon juice, and minced garlic in a food processor.

Blend until smooth, creamy, and fluffy.

If the mixture is too thick, add another teaspoon of Greek yogurt or a little olive oil.

Taste and adjust the lemon juice or seasoning as needed. Feta is naturally salty, so additional salt may not be necessary.

Refrigerate the whipped feta until you’re ready to assemble the zucchini boats.

Step 6: Prepare the Crispy Prosciutto

Arrange the prosciutto slices in a single layer on a parchment-lined baking sheet.

Bake at 200°C (400°F) for approximately 8–12 minutes, checking frequently, until the slices become crisp.

Transfer them to a plate lined with paper towels and allow them to cool. They will become crispier as they cool.

Once cooled, break the prosciutto into small pieces.

Tip: Prosciutto can brown quickly, so remove it from the oven as soon as it becomes crisp.

Step 7: Make the Cranberry Chili Honey

Place the honey, chopped dried cranberries, water, and red pepper flakes in a small saucepan.

Warm over low heat for 2–3 minutes, stirring gently until the honey becomes slightly thinner and the cranberries begin to soften.

Remove from the heat and stir in the lemon juice.

Allow the mixture to cool slightly. If it becomes too thick, add a teaspoon of warm water.

For a smoother drizzle, strain out the cranberry pieces if desired, although leaving them in adds extra texture and flavor.

Step 8: Fill the Zucchini Boats

Remove the roasted zucchini and squash from the oven.

Spoon a little whipped feta into each zucchini boat, spreading it along the bottom.

Add the roasted butternut squash cubes and a few chopped pecans.

For extra flavor, you can mix some of the roasted squash with a little of the reserved chopped zucchini flesh before filling the boats.

Step 9: Add the Festive Toppings

Scatter the remaining pecans and dried cranberries or pomegranate seeds over the stuffed zucchini.

Return the boats to the oven for another 5–8 minutes, until everything is warmed through.

Remove from the oven and add the crispy prosciutto pieces.

Finish with fresh parsley, thyme leaves, and a generous drizzle of cranberry chili honey.

Step 10: Serve and Enjoy

Transfer the zucchini boats to a serving platter.

Add a final spoonful of whipped feta or an extra drizzle of honey if desired.

Serve warm while the zucchini is tender, the squash is sweet, and the prosciutto remains crispy.

The creamy feta, crunchy pecans, tangy cranberries, and gentle heat from the honey create a wonderful balance of flavors.

Tips for Perfect Zucchini Boats

Choose firm zucchini: Medium-sized zucchini are easier to fill and hold their shape better than very large ones.

Avoid overcooking: The zucchini should be tender but not mushy.

Drain excess moisture: Removing liquid from the roasted zucchini helps keep the filling creamy rather than watery.

Roast the squash until golden: Browning brings out its natural sweetness and adds depth to the dish.

Whip the feta thoroughly: Blending the feta with cream cheese and yogurt creates a smoother, more spreadable texture.

Add the prosciutto last: This keeps it crispy instead of allowing it to soften in the moist filling.

Adjust the chili honey: Use fewer pepper flakes for a milder drizzle or add a little more for extra heat.
