Festive Cranberry Pecan Chicken Salad Lettuce Boats

  • by

Step 1: Prepare the Chicken

If you’re using freshly cooked chicken, allow it to cool slightly before shredding.

You can use cooked chicken breasts, chicken thighs, or leftover roasted chicken. Remove any bones and skin, then shred the meat using two forks.

Place the shredded chicken in a large mixing bowl.

For convenience, rotisserie chicken also works wonderfully in this recipe.

Step 2: Toast the Pecans

Place the pecans in a dry skillet over medium-low heat.

Toast for approximately 3–5 minutes, stirring frequently, until fragrant and lightly golden.

Remove them from the pan and allow them to cool before roughly chopping.

Keep a close eye on the nuts because they can burn quickly.

Step 3: Prepare the Creamy Dressing

In a small bowl, combine the Greek yogurt, mayonnaise, honey or maple syrup, and Dijon mustard.

Add the salt and black pepper, then whisk until the dressing is smooth and creamy.

Taste the dressing and adjust the sweetness or seasoning to your preference.

For a fresher flavor, you can also add a small squeeze of lemon juice.

Step 4: Combine the Chicken Salad Ingredients

Add the shredded chicken to the dressing.

Stir in the dried cranberries, toasted pecans, and finely diced celery.

Mix everything gently until the chicken is evenly coated with the creamy dressing and the ingredients are well distributed.

If you’re using fresh parsley, fold it in at this stage.

Step 5: Chill the Chicken Salad

Cover the bowl and refrigerate for 20–30 minutes.

This step allows the flavors to blend together, making the salad even more delicious.

If the mixture seems too thick after chilling, add a spoonful of Greek yogurt to achieve your preferred consistency.

Step 6: Prepare the Lettuce Leaves

Separate the butter lettuce leaves carefully, keeping them as intact as possible.

Rinse them under cool running water and pat them dry with a clean kitchen towel or paper towels.

Choose sturdy leaves that can hold the filling without tearing.

For extra crunch, refrigerate the washed leaves for a few minutes before assembling.

Step 7: Assemble the Lettuce Boats

Arrange the lettuce leaves on a serving platter.

Spoon a generous amount of cranberry pecan chicken salad into the center of each leaf.

Garnish with a few extra dried cranberries, chopped pecans, and fresh parsley if desired.

Avoid overfilling the leaves so they’re easy to pick up and eat.

Step 8: Serve and Enjoy

Serve the lettuce boats immediately while the lettuce is fresh and crisp.

These delicious little boats are perfect for lunch, light dinners, party appetizers, picnics, or holiday gatherings.

Enjoy the creamy chicken, sweet cranberries, crunchy pecans, and refreshing lettuce in every bite!

Tips for the Best Chicken Salad Lettuce Boats

Use chilled chicken: Cold chicken makes the salad easier to mix and serve.

Dry the lettuce thoroughly: Excess water can dilute the dressing and make the lettuce boats soggy.

Toast the pecans: Toasting enhances their nutty flavor and gives the salad a wonderful crunch.

Adjust the sweetness: If you prefer a less sweet salad, reduce the honey or omit it entirely.

Make it creamier: Add an extra tablespoon of Greek yogurt or mayonnaise if desired.

Add fresh herbs: Parsley, chives, or a little fresh dill complement the chicken beautifully.

Keep the lettuce crisp: Assemble the boats shortly before serving rather than filling them too far in advance.
