1. Prepare the baking sheet
Line a baking sheet with parchment paper or wax paper. Set it aside.
2. Melt the chocolate
Place the chocolate chips in a heatproof bowl.
Melt them in the microwave in 20–30 second intervals, stirring well between each interval, until completely smooth.
Alternatively, melt the chocolate gently over a double boiler.
3. Add the peanuts
Pour the roasted peanuts into the melted chocolate.
Stir gently until every peanut is completely coated in chocolate.
Add the vanilla and a pinch of salt if desired, and mix well.
4. Make the clusters
Using a spoon, scoop small portions of the chocolate-peanut mixture onto the prepared baking sheet.
You can make them small bite-sized clusters or larger portions depending on your preference.
5. Let them set
Place the tray in the refrigerator for about 30–60 minutes, or until the chocolate has completely hardened.
6. Serve
Once firm, carefully peel the clusters from the parchment paper and transfer them to a serving plate.
Store leftovers in an airtight container in the refrigerator.
Helpful Tip
For extra texture, you can use a mixture of peanuts and chopped almonds, pecans, or cashews.
Note: Although these treats contain no flour, they are not zero-carb. Peanuts and chocolate contain carbohydrates, and sweetened chocolate can contain quite a bit of added sugar. For a lower-carb version, use unsweetened or sugar-free chocolate and check the nutrition label.
