Crispy Sweet Potato Smash with Brie, Dried Cherries & Spicy Honey Walnuts

  • by

Step 1: Preheat the Oven

Preheat your oven to 220°C (425°F).

Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.

Step 2: Prepare the Sweet Potatoes

Wash and scrub the sweet potatoes thoroughly. You can leave the skins on for extra texture and flavor.

Cut them into thick, even rounds approximately 2–3 cm (¾–1¼ inches) thick.

Place the slices in a large bowl and add the olive oil, garlic powder, smoked paprika, salt, black pepper, and thyme leaves.

Toss everything together until the sweet potato slices are evenly coated.

Step 3: Roast Until Tender

Arrange the sweet potato rounds in a single layer on the prepared baking sheet.

Roast for 20–25 minutes, turning them halfway through cooking.

The slices should be tender enough to pierce with a fork and lightly golden around the edges.

Depending on their thickness, they may need a few additional minutes.

Step 4: Smash the Sweet Potatoes

Remove the baking sheet from the oven.

Using the bottom of a sturdy glass or a potato masher, gently press each sweet potato round to flatten it slightly.

Don’t press too hard; the slices should remain intact while developing a larger surface area for crisping.

Brush the tops lightly with a little extra olive oil if needed.

Return the tray to the oven and roast for another 10–15 minutes, until the edges become deeply golden and crispy.

For extra browning, switch to the broiler for the final 1–2 minutes, watching carefully to prevent burning.

Step 5: Prepare the Spicy Honey Walnuts

While the sweet potatoes finish roasting, place a small skillet over medium-low heat.

Add the butter and allow it to melt.

Stir in the chopped walnuts and toast for approximately 2–3 minutes, stirring frequently until fragrant.

Add 2 tablespoons of honey and ¼ teaspoon of red pepper flakes.

Stir until the walnuts are coated in the glossy honey mixture.

Cook for another 1–2 minutes, taking care not to burn the honey.

Remove from the heat and let the walnuts cool slightly. They will become less sticky as they cool.

Step 6: Make the Spicy Honey Drizzle

In a small bowl, combine the remaining 3 tablespoons of honey with ¼–½ teaspoon of red pepper flakes.

Add the optional lemon juice for a subtle tangy flavor.

If the honey is too thick to drizzle, warm it gently for a few seconds.

Stir well and set aside.

Adjust the amount of red pepper flakes according to your preferred level of heat.

Step 7: Add the Brie Cheese

Remove the crispy sweet potato rounds from the oven.

Place one slice of Brie on top of each round.

Return the tray to the oven for approximately 3–5 minutes, just until the Brie softens and begins to melt.

Watch carefully, as Brie melts quickly.

For a stronger golden finish, you can briefly place the tray under the broiler, but keep a close eye on the cheese.

Step 8: Add the Dried Cherries and Walnuts

Remove the tray from the oven.

Sprinkle the dried cherries over the warm Brie.

Add the honey-glazed walnuts, distributing them evenly across the sweet potato bites.

The combination of creamy cheese, chewy fruit, and crunchy nuts creates a wonderful contrast of textures.

Step 9: Drizzle with Spicy Honey

Generously drizzle the spicy honey over the assembled sweet potato bites.

Allow a little honey to run over the edges of the Brie and onto the roasted sweet potatoes.

Finish with fresh thyme leaves and a small pinch of flaky sea salt.

The fresh herbs balance the sweetness, while the salt enhances the savory flavors.

Step 10: Serve and Enjoy

Transfer the sweet potato bites to a serving platter.

Serve them warm while the Brie is soft, the sweet potatoes are crisp around the edges, and the honey is beautifully glossy.

These bites are especially delicious straight from the oven, making them perfect for holiday gatherings, dinner parties, and festive celebrations.

Tips for Perfect Crispy Sweet Potato Bites

Cut evenly: Keep the sweet potato rounds approximately the same thickness so they cook at the same rate.

Don’t overcrowd the tray: Leave space between the slices to help them roast instead of steam.

Roast before smashing: Allowing the slices to soften first makes them easier to flatten without breaking.

Use ripe Brie: Brie that is soft but still holds its shape melts beautifully over the sweet potatoes.

Toast the walnuts carefully: Walnuts can burn quickly, so use medium-low heat and stir frequently.

Add the honey at the end: Drizzling the spicy honey over the finished bites preserves its flavor and prevents it from burning in the oven.

Serve immediately: These bites are best enjoyed warm, when the cheese is creamy and the sweet potato edges are at their crispiest.
