Golden, flaky pastry wrapped around a creamy, savory chicken and vegetable filling makes this classic chicken pot pie the ultimate comfort-food dinner. It’s hearty, satisfying, and perfect for a cozy family meal.
Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 package refrigerated pie crusts, or homemade pastry
- 1 cup frozen peas
- 1 cup diced carrots
- ½ cup diced celery
- ½ cup diced onion
- 4 tablespoons butter
- ¼ cup all-purpose flour
- 2 cups chicken broth
- ½ cup milk
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme
- 1 egg, beaten, for brushing the crust
Step-by-Step Instructions
1. Prepare the vegetables
Melt the butter in a large skillet over medium heat. Add the onion, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until they begin to soften.
2. Make the creamy sauce
Sprinkle the flour over the vegetables and stir constantly for about 1 minute.
3. Add the liquids
Gradually pour in the chicken broth and milk while stirring continuously. Cook until the mixture thickens into a creamy sauce.
4. Add the chicken and peas
Stir in the cooked chicken, frozen peas, salt, black pepper, garlic powder, and thyme. Cook for another 2–3 minutes, then remove from the heat.
5. Prepare the pie
Preheat the oven to 400°F (200°C). Place one pie crust into a deep pie dish and spoon the chicken filling evenly inside.
6. Add the top crust
Cover the filling with the second pie crust. Press the edges together to seal, then trim any excess pastry. Cut several small slits in the center of the crust to allow steam to escape.
7. Brush with egg
Brush the top crust with the beaten egg. This gives the finished pot pie its beautiful golden-brown color.
8. Bake
Place the pie on a baking sheet and bake for approximately 30–40 minutes, or until the crust is deeply golden and the filling is bubbling.
9. Let it rest
Remove from the oven and let the pot pie rest for 10–15 minutes before serving. This allows the creamy filling to thicken slightly.
Slice, serve warm, and enjoy that golden, flaky crust with every spoonful of creamy chicken filling!
