Cheesy Egg & Bread Breakfast Toast

  • by

In a medium bowl, whisk together:

  • Eggs
  • Garlic powder
  • Paprika
  • Salt
  • Black pepper

Stir in the diced bell pepper, onion, parsley, and half of the shredded cheese.

Step 2: Assemble the Toasts

Lay four slices of bread on a work surface.

Sprinkle each with a little of the remaining cheese.

Top with another slice of bread to make four sandwiches.

Step 3: Coat with Egg

Dip or spoon the egg mixture over both sides of each sandwich, allowing the bread to absorb some of the mixture.

Step 4: Cook

Heat butter or olive oil in a large non-stick skillet over medium-low heat.

Cook the sandwiches for 3–4 minutes per side, pressing gently with a spatula, until golden brown and the egg is fully cooked.

If using sausage or extra toppings, add them to the top during the last minute of cooking and cover the pan briefly to melt the cheese.

Step 5: Serve

Slice each sandwich in half and serve immediately.

Pair with:

  • Fresh fruit
  • A green salad
  • Yogurt
  • Salsa or hot sauce
  • Sour cream

Tips for Success

  • Cook over medium-low heat so the bread becomes crispy without burning.
  • Freshly grated cheese melts more smoothly than pre-shredded cheese.
  • Add spinach or mushrooms for extra vegetables.
  • Use whole wheat or sourdough bread for additional flavor and texture.

Storage

  • Refrigerator: Store leftovers in an airtight container for up to 2 days.
  • Reheat: Warm in a skillet, toaster oven, or air fryer until crisp and heated through.
