Blueberry Cream Cheese Artisan Loaf

Step 1: Make the Dough

In a large bowl, combine the bread flour, salt, and yeast.

Stir together the warm water, honey, and olive oil, then pour into the dry ingredients. Mix until a shaggy dough forms.

Step 2: Knead

Knead the dough for 8–10 minutes, until smooth and elastic. Cover and let it rise in a warm place for 1½–2 hours, or until doubled in size.

Step 3: Prepare the Filling

Toss the blueberries with 1 tablespoon of flour. This helps prevent them from sinking and reduces excess moisture.

Step 4: Add the Filling

Turn the risen dough onto a lightly floured surface.

Gently flatten it into a rectangle. Scatter the blueberries and cream cheese cubes over the dough, then carefully fold and shape it into a round loaf without crushing the berries too much.

Step 5: Second Rise

Place the loaf seam-side down into a parchment-lined bowl or proofing basket.

Cover and let rise for 45–60 minutes.

Step 6: Preheat

Preheat the oven to 450°F (230°C).

If using a Dutch oven, place it in the oven while it preheats.

Step 7: Score and Bake

Turn the loaf onto parchment paper.

Brush with beaten egg if desired, sprinkle with coarse sugar, and score the top with a sharp knife.

Transfer to the hot Dutch oven, cover, and bake for 30 minutes.

Remove the lid and bake for another 15–20 minutes, until deep golden brown and the internal temperature reaches 200–205°F (93–96°C).

Step 8: Cool

Transfer the loaf to a wire rack and let it cool for at least 1 hour before slicing to allow the crumb to set.

Tips for Success

  • Keep the cream cheese cold so it holds its shape while baking.
  • If using frozen blueberries, add them straight from the freezer without thawing.
  • Avoid overmixing after adding the berries to keep them from bursting.
  • For extra flavor, add 1 teaspoon of vanilla extract or 1 teaspoon of grated lemon zest to the dough.
  • Store leftovers in an airtight container for up to 2 days, or refrigerate for up to 5 days because of the cream cheese.
