Avocado Tomato Onion Salad

  • by

Step 1: Prepare the Vegetables

Wash the cherry tomatoes, fresh herbs, and cucumber if using. Pat them dry with a clean kitchen towel.

Cut the cherry tomatoes in half. If using larger tomatoes, remove the tough stem area and chop them into bite-sized pieces.

Peel the red onion and slice it thinly. Thin slices provide flavor without overpowering the other ingredients.

Step 2: Prepare the Avocados

Cut each avocado in half lengthwise and carefully remove the pit.

Score the flesh into cubes while it is still inside the skin, then scoop the cubes out with a spoon.

Choose avocados that yield slightly to gentle pressure but are not mushy. Ripe avocados provide the salad’s delicious creamy texture.

Step 3: Make the Lime Dressing

In a small bowl, combine the olive oil and freshly squeezed lime juice.

Add the salt, black pepper, and optional red pepper flakes.

If you enjoy a stronger garlic flavor, add the minced garlic.

Whisk everything together until well combined. Taste and adjust the lime juice, salt, or pepper to suit your preference.

Step 4: Combine the Salad Ingredients

Place the chopped tomatoes, sliced red onion, and cucumber, if using, in a large salad bowl.

Add the chopped cilantro or parsley.

Pour approximately half of the dressing over the vegetables and toss gently to coat them evenly.

Step 5: Add the Avocado

Add the diced avocado to the bowl.

Pour the remaining dressing over the avocado and gently toss with a large spoon.

Be careful not to mash the avocado. The goal is to keep the pieces intact while coating them with the flavorful dressing.

Step 6: Taste and Adjust

Taste the salad and add a little more salt, black pepper, or lime juice if needed.

For extra freshness, sprinkle a little additional chopped cilantro or parsley over the top.

If you enjoy a spicy salad, add a small pinch of red pepper flakes.

Step 7: Serve Immediately

Transfer the salad to a serving bowl or arrange it on individual plates.

Serve immediately while the avocado is fresh and the vegetables are crisp.

Enjoy this refreshing salad as a light lunch, a side dish, or an accompaniment to grilled meat, fish, or roasted vegetables.

Tips for the Best Avocado Tomato Salad

Choose ripe avocados: They should be slightly soft when gently pressed but should not feel overly mushy.

Use fresh lime juice: Freshly squeezed lime juice provides a bright, tangy flavor that complements the creamy avocado.

Slice the onion thinly: Thin slices distribute the onion flavor evenly throughout the salad.

Add the avocado last: This helps prevent the avocado from becoming mashed during mixing.

Don’t overdress the salad: Start with the recommended amount of dressing and add more only if necessary.

Serve fresh: This salad tastes best immediately after preparation, when the avocado is creamy and the vegetables are crisp.
