Ingredients

For the Salad

  • 12 ounces (340 g) rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • ½ red onion, finely chopped
  • ½ cup black olives, sliced
  • 1 cup cheddar cheese, cubed
  • ¼ cup fresh parsley, chopped

For the Dressing

  • ⅓ cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil.

Add the rotini pasta and cook according to the package directions until al dente.

Drain the pasta and rinse under cold water to stop the cooking process and cool it completely.

Step 2: Prepare the Vegetables

While the pasta cools, wash and chop all the vegetables.

Slice the cherry tomatoes, dice the cucumber and bell pepper, finely chop the red onion, and slice the black olives.
