Making fresh cheese at home is surprisingly easy and requires just a few simple ingredients. This soft, creamy cheese has a mild flavor and slices beautifully, making it perfect for sandwiches, salads, crackers, or spreading on warm bread.

Ingredients

  • 1 gallon (4 liters) whole milk (avoid ultra-pasteurized if possible)
  • ¼ cup fresh lemon juice or ¼ cup white vinegar
  • 1 teaspoon salt (or to taste)
  • 2 tablespoons heavy cream (optional, for a creamier cheese)
  • 1 tablespoon chopped fresh herbs (optional: chives, parsley, dill, or thyme)
  • ½ teaspoon black pepper (optional)

  • Thermometer (recommended)
  • Cheesecloth or a clean cotton kitchen towel
  • Fine-mesh strainer or colander
  • Large bowl
  • Cheese mold or small container (optional)
